Foodporn Friday: Chocolate cola cake

I found this on Pinterest and was intrigued. I dont like Coke but I could see how its syrupy sweetness would work well in a cake/dessert.

We got up early on Sunday and started baking. All was going well until I realised the cake was in the oven and I hadn’t read the recipe properly and had left out the eggs.

When the eggless version came out of the oven I gave it a try and it was really good! It’s dense and sweet and the cinnamon works beautifully with the coke and chocolate. I didn’t bother glazing it because we had the “real” one in the oven and it tasted great without.

When the real version came out I wasn’t sure which I preferred! This one is a little too dense and syrupy and I’d probably eat it as a pudding with some cream or vanilla ice-cream rather than as a cake.

You’ll need:

  • 2 cups flour
  • 2 cups sugar
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1 cup butter
  • 1/4 cup unsweetened cocoa powder
  • 1 cup coca-cola
  • 1/2 cup buttermilk
  • 2 eggs
  • 1 tsp vanilla extract

  • 1/2 cup butter
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup coca cola
  • 4 cups icing sugar
