Foodporn friday: Mars Bar Cake

When we lived in SA I used to visit the Wanderer’s Club every now and then with a friend just to have their amazing Bar-one cake. It was incredibly rich with a layer of caramel beneath the chocolate ganache that made me weak at the knees. I’ve always wanted to try replicate it so this weekend made my first attempt.

Bar-one’s are hard to find here but Mars Bars are a pretty close match so I’ve used those instead. It was a good cake with a wicked icing but next time I’ll add more chopped Mars Bars to the cake mixture and also make a caramel to cover the cake before I ice it…

Mars Bar Chocolate Cake

Cake Ingredients

3tbl Cocoa powder

1/3 cup Boiling water

150gr Butter

1 cup Sugar

3 Large eggs

2 cups Flour

1tbl Baking powder

1/2tsp Baking soda

1/2tsp Salt

250ml Plain yoghurt

2 Mars bars, cut into chunks

Chocolate Sauce Ingredients

1 Mars bar

100gr Dark chocolate

60ml Cream

45gr Butter

Mix cocoa powder in boiling water until smooth. Leave to cool slightly.

Cream butter and sugar very well. Add eggs one at a time, beating in between. Then add the cocoa mixture.

Sift all the dry ingredients and add Mars bar chunks.

Add dry ingredients to the chocolate mixture, alternating with yoghurt.

Pour into a greased 22cm springform cake tin. Bake at 180 degrees celsius for about an hour.

While the cake is baking mix all the sauce ingredients in a saucepan over a low heat until melted.

Once the cake is baked, make holes all over the top and cover with the warm sauce.

Leave in the fridge overnight.

Middle of cake

Half a tin of caramel (or make your own)

250ml Cream, whipped

Icing – part one

2 Mars bars

100gr Dark chocolate

200gr Marshmallows

250ml Cream

Place all in a bowl and melt over a Bain Marie

Icing – part two

125gr Butter

1 1/2 cups Icing sugar

1/2 cup Cocoa powder

5ml Vanilla essence

Cream all above ingredients together

Then mix the icing part one and two together.

Cut the cake into two layers

Place a caramel & cream layer between the layers

Use a hot knife to ice the cake
