“Bake and take” cake

This week I was looking at another blogger’s site and came across her recipe for “bake and take” cake. It looked ridiculously good and I just had to try it!

Here’s a pic of mine before we demolished it. She said it freezes well but I cant see anyone ever leaving enough to freeze.

Here are the ingredients:

Cake:

  • 1 ¼ cup boiling water
  • 1 cup rolled oats
  • 1 cup white sugar
  • ½ cup shortening (you can use margarine)
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1 cup brown sugar
  • 1 1/3 cup flour
  • ½ tsp salt

Topping:

  • 1 cup coconut
  • 1 cup brown sugar
  • ½ cup chopped walnuts or pecans
  • 2 egg yolks
  • 1 tsp vanilla
  • ½ cup margarine, melted
